The half-sheet pan

It seems like a mundane thing, but a great half-sheet pan is perhaps second only to a sharp knife as the most valuable tool in the kitchen. The name by which it’s more popularly known — jelly-roll pan — doesn’t do this versatile workhorse justice. Just the right size for the oven, this rimmed sheet can bake cookies as easily as it can high-roast vegetables. You can even use it to catch drippings under the broiler when paired with a cooling rack that fits nicely in the pan (the right cooling rack is also a baking rack). Beyond the oven, it’s useful for prepping and transporting food. They’re so useful, it’s probably a good idea to have at least two of them.
